In case you missed it, I’m pretty obsessed with brunch. A few years ago we threw a St. Patrick’s Day brunch that was mostly fun because of all the rainbows we got to make. Rainbow jello shooters (completely not recommended for brunch, as an aside), cloud coasters, rainbow skittles, it was glorious. And so when I was dreaming up the perfect treat for this year’s brunch, I immediately knew I wanted to revisit the rainbows.
Fortunately, I am also equally obsessed with donuts. So the idea to make mini rainbow donuts was immediately hatched. Originally I wanted to use Skittles, but my donuts were too small and I forgot Skittles don’t come in blue. Also I thought that might be a bit gross for pre-noon dining, but do what makes you happy.
Instead, I decided to use my favourite icing trick, painting with dye. I like to call these edible watercolours, because they look exactly like the watercolour paintings I used to draw as a kid. Obviously if you are more skilled with a paintbrush you could make some pretty legit rainbows. Luckily I was charmed by the imperfections of my unsteady painting hand. All you need is a paintbrush (clean, preferably never used for paint because…well…), a bowl of water, and a rainbow icing dyes. If your lids have a bit of dye on them, that will be enough.
Start by adding a white glaze to your donuts (unless you find white donuts, which I could not). The idea is the white serves as “clouds”. I just used royal icing because it hardens into the perfect painting surface. Once dry, wet your brush and dip it in a small amount of dye. You won’t need very much! Then paint on your design. When you’re done clean off your brush, then dip it in clean water (clean and CLEAR water!). Paint a bit of water at the base of each rainbow and add gold sparkles, for the “pot of gold” at the end of the rainbow! The water should be enough to adhere them if they aren’t too thick, but if they are just paint a small amount of leftover royal icing for the same effect.
Aren’t having a brunch? That’s okay, they look just as cute packaged up and gifted! Justin’s office has been enjoying all the leftovers from my St. Patrick’s Day party recipes because otherwise I would be 300lbs, so I boxed up some donuts for them and LOVED how cute they looked on green confetti!
