Get into the patio weather spirit with this perfect rhubarb peach cocktail!
It’s finally starting to feel like spring (dare I say summer?) and that means some serious deck weather. And since I was at my dad’s last weekend for some early birthday celebrations, I decided to take advantage of his stocked bar and bartending skills and try out a new cocktail recipe. I found these super cool sodas at Loblaws last weekend and I knew they’d make the perfect base for something fun and unique. This rhubarb peach cocktail is the ultimate post work drink, perfect for spring evenings and lazy afternoons (or, let’s be honest, unwinding with mom this Mother’s Day Sunday…)
Rhubarb Peach Cocktail
1 oz Southern Comfort
1 oz rhubarb soda
1/2 cup sparkling wine
1 splash Peach Schnapps
raspberries for garnish
1. Add some ice to your glass and toss in a shot of Southern Comfort.
2. Pour about an ounce of rhubarb soda and a splash (i.e. whatever feels right, that’s the mixology term fo’ sho’) of Peach Schnapps in.
3. Top up with sparkling wine.
4. Stir gently.
5. Put your feet up.
It’s a surprisingly perfect combination, with a nice cozy warmth and a little kick from the rhubarb. Seriously, you’ll love it. And please, over indulge. It’s May after all.
