These heart shaped ice cream sandwiches are the perfect summer treat!
When I was little I was Rice Krispies obsessed. Whenever we went camping I’d always insist on those mini cereal boxes with the different kinds of cereal and then I’d pawn all the other kinds off on the rest of the family and horde the Rice Krispies. I was a mean kid. But seriously, the only thing more fun than Rice Krispies is Rice Krispies squares. If you aren’t reading this in Canada you call them something different, but I can’t remember what. Basically they are butter and marshmallows and cereal, and probably horrible for you (because, you know, butter and marshmallows) but they are my favourite snack.
And since we’ve been looking for simple and quick summer snacks to whip up when we’re hanging outside this season, it seemed only natural to add some ice cream. Jazz them up even more by adding colourful sprinkles to your Rice Krispies square mix before you let it sit. It’s the perfect party treat!
Use a hear shaped cookie cutter to cut out shapes in your pan. Then carefully slice the squares (or “hearts” I guess) in half (otherwise you’ll never get the sandwich in your mouth – trust me) and add a scoop of ice cream.
