It has been getting seriously hot in Toronto, and what better way to cool down than with some frozen treats. Personally, I prefer my cocktails frozen (just kidding I prefer my cocktails every way) and so we decided the perfect answer to sweaty summer afternoons was these sparkling blood orange & blackberry popsicles. They’re delicious, refreshing, and so so easy to make!
Sparkling Blood Orange Popsicles
1 popsicle mold (I used this one)
1 cup sparkling wine
1 cup blood orange juice
2/3 cup fresh blackberries
Mix all the ingredients together and add to the popsicle mold. We suggest cutting the blackberries up into smaller chunks so the fit in the mold better. If you use a mold where you’re inserting popsicle sticks you should put the mold in without the sticks for an hour or so, until the popsicles are slushy enough to support the sticks. Then insert the sticks perfectly straight (so you can get them out later). Let them freeze for 8 hours or overnight and then enjoy!
