So you may have noticed that we’re a little late posting today. You maybe haven’t noticed because you’re as completely out of it post-Thanksgiving as we are. Suffice it to say we’re not at the top of our game. Still, I get lonely if I don’t check in (I blame my mother) so today I’m giving you a little taste of my weekend. Literally, because I’m still craving a slice of the pumpkin cheesecake we had for dessert and I’m sharing the recipe because I’m so kind hearted, but also figuratively in that I’m going to give you some highlights of what I did outside of the kitchen too. I’m calling it “behind the bird” because I think I’m hilarious.
P.S – I’m writing this on a streetcar on my way to a midterm Fernanda and I both get to write this morning. I want points for that level of transparency.
For those of you who don’t know, I’m from a small town in cottage country called Haliburton. It’s a village. I bet you thought those weren’t real things anymore. You’re wrong. The village is on a lake and surrounded by forests. It sounds totally made up but I promise I grew up there. In a normal way.
Anyways, my mom is a huge animal lover. She runs a dog rescue and we always had like a million foster dogs and my teen years were spent bottle feeding stray kittens and one time my fiends showed up with a baby raccoon and we were playing with it on my bed and my mom came home and was like “oh hi girls, careful it doesn’t pee” and then WENT ABOUT HER DAY.
She also feeds the deer and the whole town is scared of her so they don’t hunt in the woods behind our house. That means that these deer are like the Royal deer. They’re probably the safest deer in the village if not the county. So while it seems magical and amazing that we fed deer like it was no big deal, I wouldn’t recommend trying it on some wild animals you happen upon. Just full disclosure.
Justin’s brother is recently engaged, so I get to spend my home weekends talking wedding plans and living vicariously through her. We spent a big chunk of Sunday doing manicures and talking about wedding favours and stationary suites. After brunch. Anyone who knows me knows that’s my perfect morning.
This feels a bit like burying the lead, but another reason we went home is that we’re actually thinking about buying a house! It’s a big risk leaving the city but I’m almost done school (after six years of post secondary!) and we both really miss country living. So here’s a sneak peek of the house we checked out this weekend. Those leaves tho, amIright?
I’m almost at school now (amazing) but before I go here’s that recipe I promised:
No Bake Pumpkin Cheesecake
1 cup pumpkin purée
2 1/2 cups Cool Whip
1 block cream cheese
1/2 cup sugar
Blend it all together until smooth. If you have a mixer use it. Spread it out on a graham cracker pie crust (buy that pre-made one, you’re busy, no shame) and let chill in the fridge for about four hours. I added about 30 minutes in the freezer to stiffen it up, but I also think my mom’s fridge wasn’t super cold so use you’re judgement.
